Chestnut Parfait

A rich and luscious dessert for special occasions.

4 egg yolks

10 tablespoons of sugar

2/3 cup of warmed milk flavoured with vanilla essence

14 tablespoons unsweetened chestnut puree

2 tablespoons of dark rum

2 egg whites

1/4 cup of sugar

2 cups double cream

chocolate leaves


Beat the egg yolks and sugar then add the warmed milk and cook until thickened, stirring gently.

Transfer to a mixing bowl add the chestnut puree and the rum.

While the mixture is still luke warm, then chill well.

Now make the second part whip the egg whites until stiff and fold in the sugar.

Beat the cream until thick. Fold in the egg whites into the chestnut cream.

Then carefully fold in the whipped cream. Pour into a mould and freeze for 4 hours.

Then unmould and decorate with small rounds of sweetened chestnut puree.

Dusted with chocolate powder or chocolate sauce and chocolate leaves.
