Tomato and green pepper soup recipeIngredientsTomato and green pepper soup Potage nicoise serves 4 to 6 1/2 green pepper skinned and diced 1 onion finely chopped 225g / 8 ozs tomatoes skinned, deseeded and chopped 25g / 1oz of butter 1 tablespoons plain flour 1 ltr vegetable or chicken stock 1 bouquet garni 1 clove garlic salt and pepper< pinch of sugar Blanch the pepper for 5 mins in salted boiling water. Melt the butter in a large pan and add the onions and cook slowly 5 to 6 mins. Sprinkle in the flour and cook gently for 1 to 2 mins. Add the tomatoes and pepper stir and pour on the stock. Add the bouquet of garni and the garlic crushed. A little salt and pepper and a pinch of sugar then simmer gently for 30 mins.
